Superfood Energy Bites


These little energy bites are jam-packed with nutrition. Made with a blend of fruits, nuts, and seeds, they are no-bake and ready in a matter of minutes!

Serves: 1½ dozen
Ingredients
  • ¾ cup Pitted Dates
  • 1 cup raw nuts (I mixed almonds and walnuts)
  • ¼ cup Unsweetened Coconut Flakes
  • 2 tablespoons Cacao Nibs
  • 2 tablespoons Flaxseed Meal
  • 2 tablespoon Goji Berries
  • 2 teaspoons Chia Seeds
  • pinch of salt
  • 1-2 tablespoons Honey or Maple Syrup
Instructions
  1. Into the bowl of a food processor, combine dates and raw nuts. Blend until finely ground and add the coconut, cacao nibs, flaxseed, goji berries, chia seeds, and pinch of salt. Continue to pulse until mixture is well blended. If mixture presses together easily then there is no need to add honey. Add honey one tablespoon at a time until mixture holds its shape when pressed together.
  2. Scoop mixture out by the heaping tablespoon and roll into balls. Place bites into a sealed container and store in the fridge until ready to eat. Makes 18-20 bites.
