Skinny Burrito in a Jar

Ingredients
  • 1 cup salsa, no sugar added
  • 1 (15 ounce) [can black beans, drained
  • 1 cup reduced fat cheddar cheese, shredded
  • 1/2 cup Greek Yogurt, non-fat (optional non-fat sour cream)
Instructions
  1. Evenly divide each ingredient into 4 (1/2 pint size) canning jars. Add ingredients in this order: 1/4 cup salsa, 1/4 heaping cup black beans, 1/4 cup cheese, and 2 tablespoons yogurt or sour cream.
  2. Refrigerate for up to two days. Eat straight from the jar or add to a whole wheat wrap.
  3. TIP: Try adding 1/4 cup cooked quinoa or brown rice to each jar.
