10 Minute Shrimp Salsa
This 10 Minute Shrimp Salsa is a copycat version of Bubba Gump Shrimp Company’s Shakin’ Shrimp Cocktail. It is light, refreshing and super flavorful with fresh tomatoes, refreshing lime juice, onions, cilantro, spicy jalapenos and plump, juicy shrimp! You really can’t go wrong for a tasty party snack!
Tuesday was my Sweet A’s Birthday. You guys A is 3- can you believe it? I certainly can’t, but alas, it’s true!
The night before she went to bed, I told her the story of the day she was born (in toddler terms, not including all the hard-to-understand details that go along with child birth!). She pretty much loved it, especially the part where I told her that she wouldn’t sleep at all on those nights.
Then I gave her a kiss and told her it was her last two year old kiss! I got a tiny bit sad when I said that but I managed not to get emotional about it!
When she woke the next morning, I asked her if she wanted to stay two a little bit longer. She (of course!) smiled and said “No!!” in a very firm and sure way. Well, you can’t blame me for trying!
A had a great day with her friends at daycare. She requested Minnie hair and wore her special birthday outfit that Gigi and Papa got her.
That night she enjoyed her requested dinner of ‘Roni’s (Pasta Pomodoro) and chocolate cake (Chocolate Pudding Cake the the Ganache from this recipe only with almond extract in plate of orange extract- you can also see the two part Facebook live of me making it in my group).
We had some small gifts for A to open (her big one will be given to her this weekend) and a couple gifts from her grandparents. Overall it was an excellent day and night and A said she had a great birthday!
As you might have seen on my instagram story, my thoughts on my sweet A’s 3rd birthday are:
“…And just like that, my biggest little one is 3! She is fiercely independent, has a quirky sense of humor, her curiosity is boundless and she’s smart as a whip. But most importantly, she has a wide-open heart for loving others. Happy Birthday my Allie-Bean. You’ve brought a world of joy into our home.”

A long time ago, in a galaxy far, far away, I worked at Bubba Gump Shrimp Company in Times Square. You know, in NYC, the center of the universe?
It was a very interesting experience, but I met a lot of cool people. Especially my husband, the cute guy with an annoyingly perfect Jar Jar Binks impression and the most beautiful brown eyes that I haven’t been able to stop staring into for the past eleven years!
I eventually left for a different job opportunity but I took with me an extensive knowledge of Forrest Gump trivia and a love for certain entrees that they serve. I mean, what’s not to love about a place with so much seafood on the menu? That is right up my alley.
One such item was added midway through my time as a Gumper. It was called Shakin’ Shrimp Cocktail and I’ve created my own version of it, which I call 10 Minute Shrimp Salsa (I know, I’m so original).
At the restaurant, Shakin’ Shrimp Cocktail was served in a pint glass with a metal shaker. You would bring it out to the table, add a number of lime squeezes (based on how much the guest indicated that they wanted) and then shake it all together and pour it into the bowl for the guest to enjoy with tortilla chips. Hence the play on words.
I always found it to be a light and refreshing way to start a meal, which was a nice change since much of the menu is deep fried or quite rich.
Here in Western New York, we are just not that fancy. Sorry, no table-side service in this house! But I’ve found that I can still get the same great mix without the shaker. There is something about fresh tomatoes, onions and avocado mixed with the heat of the jalapeno and the fresh flavor of the cilantro.
Add the spices and the bright citrus from the lime juice and you have yourself a lovely little snack (which is an understatement- this makes a large amount and is excellent for a crowd). This is the perfect dish to snack on by the pool and that is exactly what we did. I might even venture to add a margarita into the mix for future pool days.
INGREDIENTS
- 1 lb. of cooked shrimp, peeled and deveined
- 5-6 medium tomatoes, diced
- 1-2 avocados, diced
- 1/2 red onion, minced
- 1 jalapeno, diced
- 1 handful of cilantro, chopped
- The juice of 1-2 limes
- Salt, black pepper, cumin, chili powder and cayenne pepper, to taste (go easy on the Cayenne- a little goes a long way!)
INSTRUCTIONS
- Mix all ingredients together.
- Season to taste.
- Mix well one more time.
- Enjoy!
NOTES
This can be made a head and will last a couple days in the fridge.
