Sautéed Asparagus
One of the most popular recipes on this site is Nanou’s Easy Garlic Green Beans. And with good reason! Those little guys use minimal ingredients and minimal work for maximum flavor and a dish that people can’t seem to stop eating. So naturally I had to make a variation with asparagus!
This has quickly become my go-to sautéed asparagus preparation. It’s bursting with classic garlicky flavor and the results are the perfect delicious texture! It’s easy enough for a quick weeknight dinner but special enough to serve alongside a holiday roast or to pep up any dinner party.
Tips for how to cook asparagus
- Be sure to trim the woodsy ends off the asparagus.
- I like to let the asparagus saute for a minute before adding the asparagus to the pan to take away some of the spicy, raw-garlic flavor.
- Be sure to stir this often so the garlic doesn’t burn. If it burns you’ll get a terribly bitter flavor in the dish.
- Add the chopped parsley to the pan just before serving.
Frequently asked questions about how to cook asparagus on the stove
- How do you store asparagus? I like to store it in the fridge standing upright in a glass of water to keep it fresh. Once cooked I refrigerate it covered.
- How do you know when asparagus goes bad? The tops start to get mushy and it gets a foul smell.
- How long will asparagus keep in fridge? 3-4 days.
- Can we freeze asparagus? Yes, but I’d encourage you to do it before making this recipe. And blanch it first.
- Can you pre cut asparagus? Sure, but try not to do it more than a day in advance for optimal freshness.
- Should you peel asparagus? That’s up to you. My mother inlaw prefers to peel hers, but I don’t. It may benefit thicker pieces as they tend to be more fibrous.
- Can you reheat asparagus? Yes, although the texture may be a tad mushier than it started. I tend to use the microwave.
- How do you trim asparagus? Hold the bottom of the asparagus spear in your hand and gently start bending it. It will naturally break in the spot where the stem becomes woodsy.
