It is hard to believe we are nearing the end of February! But before we let this month pass us by, did you know that February is National Grapefruit Month? Well, if you didn’t know, now ya do ðŸ™‚ And while my 20 year old self would have said, “Okay, so…?” My almost 30 year old self (YIKES–that sounds weird) is like “YES GRAPEFRUIT MONTH!” It’s interesting how not only our taste buds change but those little things in life that get us excited. I suppose it could also be the food blogger in me as well.
If you’re a familiar face around here, you may remember I partnered with Winter Sweetz in December, and shared a fun Grapefruit Crostini recipe. It was my first time having such a sweet red grapefruit, I honestly couldn’t get over how amazing they were. I always thought I’d have to add some extra sweetness to be able to fully enjoy grapefruits but NOPE, not with these Winter Sweetz Texas red grapefruits. They are amazingly sweet all on their own. Everyone I’ve shared these grapefruits with has said they’re the best grapefruits they’ve ever had.
And then when you win you can make this simple yet delicious Grapefruit Zucchini Noodle Kale Salad ðŸ™‚
Okay, even if you don’t win, you must make this salad. It is light and refreshing and just what your body needs this time of year: a pretty rainbow of fruit and vegetables.

And to think I didn’t care for grapefruits when I was younger…  Grapefruits are powerhouses.

NOW LET’S MAKE THIS SALAD

WHAT YOU NEED

  • kale
  • zucchini
  • red grapefruits
  • avocado
  • purple cabbage
  • sliced almonds
  • ground ginger
  • avocado oil (or extra virgin olive)

This salad is fairly quick and takes just a little bit of prep!
Massage kale with oil (yes, just trust me)
Spiralize zucchini (or thinly slice)
Slice  avocado
Shred purple cabbage
Segment grapefruits 
Then whisk together your dressing ingredients (just oil, grapefruit juice, and ground ginger), toss with sliced almonds and enjoy!
This grapefruit kale salad is lovely on it’s own but would pair so well with some grilled mahi mahi, don’t you think? Swooning just thinking about it.

Grapefruit Zucchini Noodle Kale Salad with Grapefruit Ginger Vinaigrette 



DESCRIPTION

This kale salad is light and refreshing thanks to sweet Texas red grapefruits. Tossed in a simple grapefruit ginger vinaigrette, you will love it! Vegan, paleo, and no added sugars!


INGREDIENTS

for the vinaigrette
  • 1/4 cup grapefruit juice, freshly squeezed
  • 2 TBS avocado oil, or extra virgin olive oil
  • 1/4 tsp ground ginger
  • pinch of sea salt
for the salad
  • 2 cups chopped kale, plus oil for massaging
  • 1 medium zucchini, spiralized or thinly sliced
  • 1 cup shredded purple cabbage
  • 2 large Winter Sweetz red grapefruits (some juice reserved)
  • 1 medium avocado, fleshed and sliced
  • 1/4 cup sliced almonds

INSTRUCTIONS

  1. In a small bowl whisk together ingredients for vinaigrette. Set aside.
  2. Gently massage kale between fingers with oil. Just trust me–it helps release the oils and takes away the bitter taste that is often associated with kale.
  3. In two medium bowls, evenly divide the kale, spiralized zucchini, purple cabbage, sliced avocados, and grapefruit segments. Drizzle on vinaigrette and top with sliced almonds. Enjoy!

NOTES

This salad is great on it’s own but would pair really nicely with some grilled mahi mahi, or even grilled chicken.
Salad can be prepped the night before for quick lunch.
