Grilled Sesame Lime Chicken with Spicy Thai Peanut Sauce



A meal the family will go nuts for! Grilled Sesame Lime Chicken served with a homemade Spicy Thai Peanut Sauce. Ya’ll, I’m warning you just make a double batch of the sauce. You’re gonna need it!

You would have also seen that I recently got a TATTOO!!!
And yes, I was coherent when I got it. I have been wanting one for a LONG LONG time!

As in, you submit the design or wording you want to get and then you can “test” it out to make sure it’s what you like and want before you actually do it! That is exactly what I did. I ordered some temporary “tats” (I feel like I can say that now because I’m a tattoo wearing girl) and have been wearing them to solidify my decision.
So what did I get?
I wanted to get something personal. Something that would either remind me of who I am or who God is. A couple years ago, actually after our miscarriage, I felt like the Lord spoke the words “faithful” to me.
When I look back on the story of my life, all 32 years of it, I see God’s faithfulness in my life. He has never left me or forsaken me, he has never abandoned me. He is always been there, even though sometimes I felt like I was alone.
Through my mom drinking for four years – but then seeing the Lord pull her out of that into sobriety. My dad leaving our family almost leading to divorce – to God reconciling their marriage and now they celebrate 28 years. My own grappling with an all consuming fear of abandonment – to God breaking those chains and walking in freedom.
There are countless times that I can recall God faithfully entering the scene and putting his redemptive touch on the story.
Now, not all of those “significant” moments end in happy endings. We still struggle to have a child after three years. We’ve tried IVF and have been unsuccessful. But I still feel His presence and KNOW that God is faithful. The “present time” we live in is NOT the end of our story. He has plenty more yet written that we don’t know about. He is FAITHFUL to complete His work in us.
So now can you guess what I have?
Yet, it’s a tattoo that says “faithful” in Hebrew. It’s on my right wrist so when I look down I am reminded that He is faithful and to NEVER forget that!
Ok, moving away from tattoos to yummy drool worthy food.

I actually posted this GRILLED SESAME LIME CHICKEN WITH SPICY THAI PEANUT SAUCE back in 2014, but I love it so much I decided to re-photograph it and update the post to put it back in front of those beautiful eyes of yours again.
I know you’re going to love it. The nutty flavor from the chicken combined with the Spicy Thai Peanut Sauce will take you straight to Thailand in one bite. It is creamy, spicy, zesty and all together deliciously addicting. Let’s just say, make a double batch of the sauce and you’ll be one happy camper!
I served this recipe with the THAI MANGO AVOCADO SALAD I made last week and whoazer, what an amazing combination!

Grilled Sesame Lime Chicken with Spicy Thai Peanut Sauce

Description

A meal the family will go nuts for! Grilled Sesame Lime Chicken served with a homemade Spicy Thai Peanut Sauce. Ya’ll, I’m warning you just make a double batch of the sauce. You’re gonna need it!

Ingredients

Sesame Lime Chicken Kebabs:

  • 1 lb boneless chicken breasts, cut into 1” cubes
  • 2 tablespoons fresh lime juice
  • 2 tablespoons toasted sesame oil
  • salt & pepper

Spicy Peanut Sauce:

  • 1/4 cup + 1 tablespoon creamy peanut butter
  • 1 tablespoon low sodium soy sauce (or tamari for gluten free)
  • 1 teaspoon rice vinegar
  • 1 teaspoon grated ginger {or 1/2 teaspoon of ground ginger}
  • 1 garlic clove, minced
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup water
  • 1 tablespoon fresh lime juice
  • green onions, sliced {for garnish}

Instructions

  1. In a large bowl, mix sesame oil, lime juice, salt, & pepper.
  2. Add cubed chicken to marinade mixture, toss to coat chicken.
  3. Cover and marinate in refrigerator for 20 minutes.
  4. In the meantime, in a small bowl mix together peanut butter, soy sauce, rice vinegar, grated ginger, garlic clove, red pepper flakes, water, and fresh lime juice. Whisk together until smooth and set aside.
  5. Place chicken cubes on skewers.
  6. Heat grill to medium high heat or 400 degrees..
  7. Grill each side for 3-4 minutes.
  8. Serve with spicy peanut sauce.
