Kid Friendly Fruit Snack Recipe


Strawberries and daylight!
My favorite signs of spring! Spring has yet to decide if it is going to stay snowy or perk up a bit around where I live, but I can tell spring is around the corner when I’m seeing more sunshine, and strawberries from warmer climates arriving at the store.

The snow clouded ceiling of winter is on its way out, and with the extra sunshine, my kids are quite literally like a moth to a flame when it comes to playing outside. There’s no stopping them, and after such a long winter, I’m not about to make them come inside for snacks and meals.
Make every bite count…
I found out very quick in my momma journey, that these little people have little bellies! Sometimes they can really put the food away {and I walk away wondering where they stored it all!}, but most of the time I have a motto of “make every bite count” because they really do just eat when they are hungry – no more and no less.

When it comes to snack time, I’m all about high protein and fat to avoid sugar crashing. While a little bowl of strawberries is a great, healthy snack, adding something like a slice of raw cheese, a small handful of nuts, or a few cubes of avocado will satiate busy kids longer, keeping them more even in temperament while avoiding the inevitable blood sugar crash. Making sure snack time is nutrient dense is key in keeping kids filled up.
But fruit snacks are fun! And portable!
I totally get it! I have gotten the little bags of organic fruit snacks even in a pinch! But what if we could create a fun, kid friendly fruit snack that was loaded with grassfed protein, a little bit of brain building fat, and still had a super fun, kid friendly strawberry taste?!

Just 4 simple ingredients, and you can have these fruit snacks in a gelatin mold in under 10 minutes. You’ll have a portable, nourishing snack for on the go all spring and summer long! (I used these little cube molds for the fruit snacks pictured here. They really feel just like the fruit snacks you buy at the store, and pack up really nice! If you want to get fancy, you can get so many different shapes and patterns for your fruit snacks!)
All fruit, no preservatives!
Because ingredient control is pretty important. Remember that “every bite counts” thing? Every bite of these fruit snacks is loaded with real fruit, friendly fat loaded coconut milk, and protein rich grassfed gelatin.


Kid Friendly Fruit Snack Recipe

Ingredients

  • 3 cups fresh strawberries, hulled and halved (If you want to use frozen strawberries, thaw and drain them first)
  • 1/4 cup coconut milk (You can make coconut milk if you wish. Water would work fine here too.)
  • 2-4 tbsp raw honey to taste (My little ones don’t need the honey, but if your kids are used to sweeter things you can add up to a few tablespoons. If your berries are not quite in season they might need a little boost too.)
  • 1/4 cup grassfed gelatin
Step by Step:
1. Put the strawberries and coconut milk in a small sauce pan, and bring to a low simmer for 3-4 minutes. You can squish the berries a bit with a potato masher to let their juices out.
2. Put the warm strawberry mixture into a blender, add the honey, and blend until smooth. Taste for sweetness and add more honey if you need.
3. Add the gelatin and blend to combine until smooth.
4. Pour the strawberry gelatin mixture into your mold and place in the freezer for 15-30 minutes or the fridge for an hour so the gelatin sets up. Pop the fruit snacks out of the molds and serve. You can store leftovers in an airtight container in the fridge up to 2 weeks. They will hold their shape well to be packed up for school lunches too!
