Crockpot Italian Zucchini Casserole
Well, Happy August to you, friends! We have about 3 weeks until summer is officially over in this house, with school starting soon. But we are bound and determined to hold onto summer as much as we can!
This past weekend we celebrated Wesley’s 5th birthday and I can hardly believe it! Paul has been joking that Wesley has been 4 for about 3 years now, haha! I will admit, this was a hard year for us – Wesley is a kid that keeps us on our toes. But, he is sensitive, loving, my cuddle guy, and he absolutely adores his brothers. He’s the one that when we’re in the store and I say, “I’m leaving,” he will BEG Silas to start walking for fear that I will leave him in the store. I love that so much about him!
We celebrated by visiting a local bounce house place, lunch at McDonald’s (he chose a breakfast Happy Meal – totally MY kid), and presents and cake at home with the whole family. I will say too, it was the first time we ordered a cake from Costco and OH MAN was that cake good!
Believe it or not, this Crockpot Italian Zucchini Casserole is one of Wesley’s new favorite dinners! Neither of my kids are crazy about vegetables, but he’s one that will at least try most things once. And this dinner he loved!
Crockpot Italian Zucchini Casserole

Ingredients:
- 1 lb ground beef, cooked and drained
- 1 green pepper, diced
- 3 zucchini, chopped
- 16 oz spaghetti sauce
- 15 oz diced tomatoes, undrained
- 2 cups instant brown rice, uncooked
- 1 teaspoon garlic powder
- 1 tablespoon dried, minced onion
- 1 teaspoon Italian seasoning
- 1 cup mozzarella cheese
Instructions:
- Dice vegetables while ground beef is browning in pain, drain.
- Place vegetables, ground beef, and all other ingredients except cheese into the Crockpot.
- Stir until combined well, cover, and cook on low for 4 hours.
- Sprinkle cheese over top, cover, and cook an additional 10 minutes or until cheese is melted.
This is such an awesome back to school dinner – just pop all the ingredients in the slow cooker and it’s ready when you are!
