Entertaining guests for breakfast is always a source of panic for me. Not only am I NOT a morning person, who has the time in the morning to cook a full meal for guests? That’s where make-ahead recipes or easy assembly jobs come in handy. And this easy breakfast board has become my go-to for fuss-free breakfast entertaining and brunch parties.

HOW TO BUILD AN EASY BREAKFAST BOARD

I love that a breakfast or brunch board is versatile and can be customized to your own preferences and what you have in the house. To make things super easy, I like adding shop-bought pastries like waffles, croissants, muffins and bagels and adding breakfast elements like eggs and bacon. Boiled eggs are perfect as they can be made the night before and bacon is cooked in a flash in a hot oven (and you have to heat the croissants anyway).
Scrambled eggs are also great when cooking for a crowd and poached eggs can be made ahead and kept in a bowl of water in the fridge until you’re ready to serve. Breakfast sausages, smoked salmon, slices of ham or other charcuterie will also work well as will cheese. And if you’re serving bagels, don’t forget the cream cheese.
I like to finish the easy breakfast board off with fresh fruit, pots of yogurt (these easy breakfast yogurt and fruit jars will be perfect!), jam and maple syrup. Guests can make up their own breakfast plates leaving you to enjoy a cup of coffee and bask in the glory of being the hostess (or host) with the mostess.

INGREDIENTS

BOILED EGGS

  • 4 eggs

CRISPY OVEN BACON

  • 250 streaky bacon (approximately 10 strips)

FOR THE BREAKFAST BOARD

  • croissants
  • waffles
  • strawberries
  • jam of your choice
  • yogurt
  • maple syrup

INSTRUCTIONS

  • Pre-heat the oven to 200ºC/400ºF and place the bacon on a non-stick baking tray. 
  • Place in the hot oven and allow to cook for 10-15 minutes, flipping halfway through, until the bacon is cooked to your preference. 
  • In the meantime, place the eggs in a pot and fill with water. 
  • Place over high heat on the stove and once the water comes up to a boil, start your timer. I cooked these eggs for 6 minutes as I wanted them to be set throughout but have creamy yolks. 4-5 minutes = soft, 5-6 minutes = jammy yolks, 6-7 minutes = hard boiled. 
  • Remove the eggs from the boiling water and place in an ice bath to immediately cool them down before peeling them. 
  • Place the halved boiled eggs, crispy bacon and other breakfast ingredients on a large serving board/platter and serve with hot coffee and fresh pressed orange juice.
