There are so many great options to start your day with but nothing can beat a hot breakfast!  This Easy Sausage Breakfast Casserole is stuffed with Eckrich Smoked Sausage, veggies (including spinach) and cheese! Your entire family is going to love this! The best part about this dish is the sausage! I’ve partnered with Eckrich Smoked Sausage because their wide selection of smoked sausages is always the perfect addition to any meal. Parker and I are always adding these smoked sausages into our mac and cheese, sheet pan meals, pasta and more! For this recipe since they’re already precooked, we just sliced them up, gave them a quick sautĂ© to really bring out their flavors and let them cook into the breakfast casserole, yum! Less time cooking, more time eating, yum!

Easy Breakfast for a Crowd

I am all about an easy recipe I can make to feed my whole family! When I’m making dinner I feel like I have a little more time to prepare the meal, but with breakfast people wake up and they want to eat!  This recipe just needs 45 minutes in the oven and you can do all of the prep work the night before. Just slice up and saute your veggies and Eckrich Smoked Sausage, pop them into a container to keep in the fridge and in the morning add the veggies, cheese, tomatoes and eggs to a casserole dish and bake! You can even get this going in the morning and while it’s baking get dressed and ready for the day! This Easy Sausage Breakfast Casserole really is the perfect meal to feed your whole family this holiday season because it gives you the gift of more time with your family!

Easy Breakfast Casserole

The trick to an easy breakfast casserole is the ingredients! You want lots of color to make it beautiful and tasty, not too much cheese, and you want to pick the right meat! Eckrich Smoked Sausage is my go-to because it comes pre-cooked so there’s nothing I can do to mess it up, and since it’s smoked it’s packed with a ton of flavor! I love putting a ton of veggies into my casseroles because it starts off my day right! I know I’m feeding my family something good for them.  I don’t add too much cheese to my breakfast casseroles because I just don’t think they need it, but my husband likes to add on a sprinkle more to his piece when it comes out of the oven. So you can always serve this Easy Sausage Breakfast Casserole with a little dish of extra cheese for those cheesy lovers out there!

As I said before, if you want to prep this meal the night before, I would stop right after sautĂ©ing your veggies and Eckrich Smoked Sausage.  Wait to add the tomatoes and spinach in the morning! Check out how good this breakfast casserole looks before going into the oven! And it’s so easy to make! Don’t slave away for an hour trying to make pancakes for everyone only to have some of them cold!  Make this casserole instead!

EASY SAUSAGE BREAKFAST CASSEROLE



 Servings 16

Ingredients

  • 1 pkg. Eckrich Smoked Sausage
  • 1 Tbsp. butter
  • 1/2 red onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 1/4 Cup mushrooms, chopped
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 Cup spinach, roughly chopped
  • 1 Cup cherry tomatoes, halved
  • 12 eggs
  • 1/3 Cup milk
  • 3/4 Cup mozzarella cheese, shredded

Instructions

  1. Preheat oven to 375 degrees and spray a 9X13 inch casserole dish.
  2. Chop all veggies into bite-sized pieces.
  3. Heat a large skillet over medium heat, add butter and then add onions and bell peppers. Let cook for 3 minutes and then add Eckrich Smoked Sausage, mushrooms, salt and pepper. Cook for 3 more minutes and then remove from heat and stir in spinach and sliced tomatoes. (If I was prepping this meal the night before I would stop right before I add the spinach and tomatoes and keep the sautéed veggies and smoked sausage in the fridge until morning.)
  4. Pour into prepared casserole dish.
  5. In a separate bowl, add all your eggs and milk, whisk together. (You can add some cheese into this mixture if you would like.)
  6. Pour egg mixture into the casserole dish, gently stir to make sure the eggs are spread out, top with cheese and bake for 45 minutes! Serve warm!
